How to Gut a Fish
Thou shall hev a fishy on a little dishy,Thou shall hev a fishy when the boat comes in. The first thing we have to do is to get all the scales off the fish. This can be quite a messy procedure so I’d like to do it under running water. I’ll just take a knife. An ordinary dinner knife and run it down the fish. That’s fine. I’ve taken all the scales off right from the tail all the way up tounder the head here and along the back. Now you need a good pair of strong scissors because what I’m gonna do is I’m gonnacut off this anal fin here. I’m gonna cut off these two fins at the frontand also the fins off the back. Be careful at this one because it’s got very sharp spines in it. Finally, I’ll take off these little flappy fins by the gills here. Having removed all the fins, the next thing we have to do is remove the gills becauseif we leave them there, the fish will taste bitter. So we turn it on its back,push open the gilland you can cut them down with your scissors or with a very sharp knife. There. You can see it’s nice and clean in there now. I’m just gonna rinse this under the tap. Now comes the really messy bit and I like to do this on a newspaper ‘cosbits go everywhere. What you’re trying to do is you’re trying tofind a little hole which is just at thebase of the fin that I cut off here. You see that?There’s the fin I cut offand there’s his bum hole. Then get a really sharp knife and start in there. Cut your wayalong. Now, pull all the innards outwith a spoon if you like. You’ll have to snip this bit away, just ??? the bone here. Get your scissors in. Just make sure you’ve scooped everything out from the front ???Give your fish a good wash inside and out. Now dry the fish well inside and out.
